hi, i'm pizza dan at pizzahomechef.com. igot to say my pizza making really took off when i figured how to make pizza dough witha stand mixer. it's great because you can make enough easily for four large pizzas,large being 14 inch diameter or bigger. so, i'm just going to take you through a quickrecipe and you're going to see, it's only got like four ingredients and very few steps.the first thing that we do is: put in 8 cups of unbleached white flour. don'tsmash it in, just lightly scoop it and do 8 cups of that. so, we've counted our 8 cupsof flour, unbleached, normal, it's just grocery store flour.now, we're going to add a tablespoon and a teaspoon of yeast, dried, active yeast.we're also adding a rounded teaspoon of salt.


those are your dry ingredients. so, we haveadded the 3 dry ingredients, we're going to mix them. so, now, we're going to slowly add:2 2/3 cups of water as you see, as it mixes, the texture slowlychanges and it starts to clump together, then almost string together, until it starts tobecome recognizable pizza dough. so, because of humidity and other factors, making pizzadough is never exactly the measurements. so, if it still seems too wet and sloppy to you,you can add flour to bring it to the right consistency. if it still seems too dry andcrumbly, you can add water slowly until you get it to nice, pizza dough with the rightconsistency. i'm briefly hand kneading the dough a littlebit and that's just like kind of forming a


ball, pushing down on it, pulling it back,quarter turn and pushing down the next piece so. since we have about four pizzas here,i'm just shaping it into a cylinder and then i'm just going to eyeball four pieces outof it and the beauty of this is, if i want to make one large pizza but you want to savedough for three more, you can just bag these up and throw them in the freezer like this.just push all the air out and before it starts rising and creating new gas in the risingprocess, get it in the freezer air-tight and you've got pizza dough for three to four months.so, i've created, formed the dough and now i'm going to get a glass bowl and a littlebit of olive oil and just put a drip of olive oil in there. it's not really an ingredient,it's just to keep the dough from sticking


to the bowl as it rises and to seal the doughso it doesn't dry out. and then all i do is let it sit there, seal it over with a plasticbag and a rubber band and i'm just going to watch it until it doubles in size. then it'sready to work with. .making two pizzas. so, we're coating our second ball of dough. we're having two pizzas tonightand, as you can see, it's really easy to make a lot of good pizza dough with a stand mixerand you can get them at pizzahomechef.com.
