hello namaste salaamwalekum satsriyakaal; welcome back to another session with your vahchef at vahrehvah.com. we all love pumpkin during halloween timesbut in india we also make a lot of dishes using pumpkin today i'm going to show you one simpledish. to make this pumpkin dish, add one tablespoon of oil, to this add mustardseeds let this mustard seeds crackle, add cumin seeds, add broken cashew nuts adding this cashew nuts is also optional and then add chopped onions, salt, turmericand mix it up a little bit of curry leaves, add a pinch of ginger garlic paste and saute till the raw flavors go away
then you can add pumpkin add a teaspoon of coriander powder,chilli powder, add half a teaspoon of sugar very little water you know do add toomuch water just add little water and then cover itup with a lid and let it cook in a slow flame till all the moisture evaporates andthis pumpkin becomes tender and nice. in the meanwhile in another pan add little bit of oil and add 2 tablespoons of besan and slowly saute this besan till it is cooked well and you get the nice flavor of besan all the raw flavoris gone and now you get the nice roasted
besan flavor keep this aside thispumpkin is also already you can see this pumpkin is cooked tender if i mix it too much this will breakinto pieces just spread it in the pan itself sprinkle the besan flour which youhave roasted and just mix it up. after you mix the besan just cover it up and letit steam for 4-5 minutes on a slow flame hah....this sweet pumpkin, nice flavor ofbesan combination with little bit of cashew nuts. wow..it smells really good chopped coriander
