Cooking, Recipes mince pies
hey, guys, so it is almost christmas, but it's not christmasuntil you've had a mince pie. so today, we're Cooking, Recipes mince pies. yeah,but not everybody likes mince pies, so i'm Cooking, Recipesa chocolate style mince pie. and i am doing a twiston the traditional mince pie with white chocolate and cranberries. i've got a surprise for you. what?
since there wasa countdown for christmas, you've got to judgewhether i've got good taste or not. - christmas jumper. - christmas jumper time. mike loves a good christmas jumper. this is a normal christmas one.i should think it's quite festive. can i turn around? okay, so you can kind of turn around. that's so bad. you know, we're stepping mince piesup to another level.
you don't actually ever eat them,do you? no, because i don't like them. - now i'm gonna cut the shapes. - okay. you're doing round,i have these snowflake shapes. so what i think you need to do is, i think you need to do the big oneto see whether it fits and if it doesn't fit,then you can always cut it down, whereas you can't add more to it,can you? so let's try out the big one first.
i think it's gonna be too big,but mike thought it was good. you know,i think it's still gonna be okay. oh, no, yeah, you're right, mike. see? that will work nicely. and now i'm usingthe smaller snowflake cutter to make the lids for my mince pies. - everything is in the fridge.- done. done, dusted,and it's on to the fillings. i'm gonna go first becausei'm gonna cook mine, your dish…
mine's really easy. so first i'm gonna put in sugar,put in the butter. one thing you must bereally careful of, of this is thatyou don't get it too hot because you burn it really quickly. so i keep taking it kind ofon and off the heat and then once it's melted, i'm gonna put itinto my bowl and we're ready to go. i'm gonna do my fillingcause it's super easy. i've got 300 grams of mincemeatthat i'm gonna pop in the bowl.
and then i've got25 grams of mixed peel. i'm also gonnaput in some white chocolate. these are sainsbury's cookswhite chocolate chips. and then i'm going totake my dried cranberries, 75 grams again and just popthese in as well. it's going to be really sweet. so my chocolate mixtureis now cooling, so i'm gonna separate this egg yolk. so i'm gonna whiskthese until they're soft peaks.
so that is done. i'm now gonna add my eggs with flourinto my chocolate mixture. have you ever thoughtof using a whisking machine? it's much easier. electric whisk, a whisking machine. whisking machine. we're gonna add the egg whitesinto the mixture, here we go. a lot more complicated than mine. and then we're gonna foldthis in gently.
now we add the mincemeat. now we scoop them into the cases, right? that's the plan. i'm gonna getthe pastry out of the fridge. in goes the first one. now it is time for the lidsand they're gonna look beautiful, like christmas snowflakes. so i'm just now gonnaglaze a bit of egg yolk and sugar on top of these to makethem nice and golden brown.
sprinkle some sugar on top. those ones look betterbecause they're in the smaller… my ones you mean. - bowls. no, as in the oneswhere they come over the top. look at that.my dish come out, no problem. yeah, but mine look better, so. i'm gonna start with mine. you can have your one. it's actually really, really good.
is it good? this is good too. i'm really surprised. this is a mince pie i would serve,and eat myself. would you care to try it? that tastes a lot likea normal mince pie. this one is like a variationon a normal mince pie. this one is like a whole new thing. i think i prefer mine.mike probably prefers his. whatever.mine is way better, way better.
