today i will be making cabbage kofta. a delicious main dish. koftas are like fried dumplings and cooked with spicy gravy. this recipe will serve 4. for koftas we need: 4 cups of shredded cabbage about 3/4 cup of gram flour 1 chopped green chilli

2 tablespoons of chopped cilantro 1/2 teaspoon of cumin seeds 1 teaspoon of shredded ginger and 1 teaspoon of salt. first we are going to make the koftas. and after that we are going to make the tomato gravy. so we are going to mix all the ingredients together. ginger cumin seeds

green chilli cilantro and gram flour (besan). so we will save little bit and see if we really need it. i think i do need more gram flour. and this time we are going to add the salt also. batter is ready and this is just a right texture. not very soft and not very hard. as you see i did not needed to use any water

because cabbage already have it's own natural water. heat is on, medium high. so we are going to make the kofta. just to check the oil if it is ready, put a small piece. and it's sizzling and it's not breaking up. so if heat is very high. then they will cook from outside faster and inside will stay raw. so this is the right heat and we are going to start making kofta. about 1 tablespoon of batter.

and this is the last one. it looks enough. and now i am going fry those in the second batch. wait for about a minute before you stir them. otherwise they can break. this should take about 2-3 minutes to cook and it should be golden brown all around. it's time to turn it around. you do have to do few times.

and as you see they have started changing the color. so just for after another minute they should be ready. koftas are ready this has been about 2.5 minutes. they are looking very good. and it's very tempting to just eat them while you are making the second batch. koftas are done. now i am going to make the gravy. so we need 3 medium sized tomatoes

about 1 inch piece of ginger 1 green chilli 2 tablespoons of oil pinch of asafoetida 1 teaspoon of cumin seeds 1 tablespoon of gram flour (besan) 1/2 teaspoon of turmeric 1/2 teaspoon of paprika 1.5 tablespoons of coriander powder

1/2 teaspoon of red chilli powder about 3/4 teaspoon of salt. and 1/2 teaspoon of sugar. 3 tablespoon of yougurt and for garnish about 2 tablespoons of chopped cilantro. so first i am going to blend the tomatoes, chillies and ginger together for the gravy. this is done.

so i am going to add the oil. and just wait for little bit till oil is hot. oil is ready. first i am going to put the asafoetida. stir. and then put the gram flour. just stir for about half a minute. gram flour gives the good thickness to the gravy and has a good smell. going to add the tomatoes. this should cook till it becomes about half in quantity.

as you see these tomatoes have about half the volume than we started with. it's time add the spices. coriander powder chilli powder turmeric salt and mix it. and now we are going to add the yogurt.

and sugar. this needs to be cooked for about 2 minutes. you will see the all the spices have started leaving the oil. so spice mix looks ready as you see some oil is started coming on the top. i am going to add the 2 cups of water. and let it boil and simmer for couple of minutes before i add the koftas. after gravy has come to boil i have covered it. and it's about already 2 minutes. time to add the koftas.

this smelling really great. and we just have to let it cook for another 2-3 minutes after it comes to boil. let's check if koftas are ready. it has been about 4 minutes after i have added the koftas. they smell great. and looks very good. i am going to put the cilantro. and just mix it.

they are ready to serve. koftas are looking great and smelling delicious. you can serve this with rice, naan or roti. your family will enjoy this very much. this is a very festive looking dish. thank you. and i will see you again with a new recipe.
