let me show you how easy it is. hey, there. amanda here. let's talk easy weeknightcooking. i know chicken and lemons doesn't sound very interesting, but i promise, onceyou see this dish, you're going to become obsessed with it. it'll be a staple in yourkitchen. a friend of mine introduced it to me a couple years ago, and i changed it alittle bit, and i can't stop eating it. i'm obsessed. let me show you how easy it is. so i've got about 2â½ pounds of bone-in, skin-onchicken thighs here. i'm going to salt and pepper it really well. that's one of the keysto this recipe, making sure that you salt your chicken. i know many people think thatchicken can be dry


and flavorless. it's probably because they'reeating chicken breasts. chicken thigh is where it's at. i've salted it really well. i'm going to adda little bit of pepper on there. make sure to get bone-in and skin-on chicken thighs.the skin gets nice and brown and crispy and the bone-in keeps it juicy and moist. so i'vegot a cast iron skillet here. i've heated it up until it's almost smoking. i'm goingto add a couple tablespoons of olive oil, just right into that pan, perfect, and thenwe're going to sear these chicken breasts skin side down. okay, so you can hear thatsizzle. that means it's working. searing your meatis really important, because it locks in flavor


and moisture. so it's going to take about 2-3 minutes tosear these chicken breasts. we'll know when it's ready, when the skin is nice and crispyand brown. so my chicken is smelling amazing, and it's starting to get a great sear in it.look at that perfect color. that's what you want. you want a lot of color in that skin. so i'm going to remove it from the pan. i'mgoing to add about a half of an onion that i've thinly sliced just to the bottom,and then we're going to return our chicken breast to the pan skin-side up. and it smellsso good. onions are just... they're magic. i'm pretty sure they're magic. they just smellamazing. they make you cry when they're raw,


but when they start to get cooked, it's justlike the best smell. caramelized onions, you can't beat that smell. and i've got a mixtureof chicken broth and the juice of one lemon. i'm just going to pour it right in. so reallyimportant here, you don't want the broth to cover the skin.you want the skin to stay crispy, but you want the bottom of the chicken thighs to kindof braise, so it just comes right to the bottom of the chicken breast. so what's going to happen when we cook itin the oven, the skin is going to stay out and kind of continue to get crispy and brown,and then the bottom of the chicken is going to braise so it's going to make that meatreally juicy and moist. top it with a little


lemon. i'm going to put this in a 400-degreeoven for about 20-25 minutes. so a lot of my friends ask me, "how do i knowwhen the chicken is done?" everyone is so worried about eating raw chicken,and i'm certainly in that camp. i don't want to eat raw chicken. there's manual ones, ihave an automatic one, but they work all just as fine. so you basically would just stickthe tip right into the center of the meat and check for the temperature, and this isa great way to tell any kind of meat, not just chicken. so this is right at 165. i'm going to letit rest for a couple of minutes, and then it's going to be perfect and ready to go.so i'm going to garnish with a little time
