recipe for grilled chicken breast marinade



today on the stay at home chef i'm showing you how to make a grilled mojo chicken salad. mojo is a cuban garlic citrus sauce that is absolutely heavenly. i'm taking my own twist on this classic cuban dish and turning it into a healthy grilled chicken salad. we're going to start by making our marinade.


recipe for grilled chicken breast marinade, we'l have 1/2 cup of extra virgin olive oil 1/2 cup lemon juice 1/2 cup orange juice 4 cloves crushed garlic


1 teaspoon crushed red pepper flakes 1 tablespoon dried oregano 1 teaspoon salt then whisk this all together. now, bonus! our marinade also doubles as our salad dressing so i'm going to pour half of this into a salad dressing container and the other half i'm going to pour right over the chicken. now pop your chicken into the fridge and let it marinate for at least an hour


chicken can marinate in the fridge for up to 2 days so you have some time there. next i have another layer of flavor i want to add to our salad with some quick pickled onions. i have 1 sliced red onion in my bowl and i'm just going to pour over 1/2 cup of red wine vinegar this part is optional, but if you really want to bring some heat to this salad add in a couple of sliced jalapenos. mix this together and let it sit until your chicken is done and you are ready to compile your salad. before you grill your chicken you'll want to get all of your toppings prepped and ready to go.


in addition to our pickled red onions and jalapenos i'm going to grill up 3 bell peppers we'll use a couple of avocados. and some fresh cilantro leaves. once the marinade time is almost up get your outdoor grill heating to medium high heat. which is 375 to 450 degress f. you'll want to place your chicken breasts down on a well oiled grate so they don't stick chicken breasts really only take a few minutes per side to get those nice grill marks


as well as being cooked through. you'll want to make sure your chicken breast reaches an internal temperature of 160 degrees f and then remove it from the heat. let it rest for about 5 minutes before you slice into it. the internal temperature will rise to the safe temperature of 165 degrees f giving you the most tender, juicy grilled chicken breast. now don't forget, you also want to grill up your bell peppers. get this done while the chicken rests. this is the perfect thing to do while you wait for the chicken because the bell peppers really only take 2 minutes.


compile your salad together on a bed of lettuce with the pickled red onions fresh cilantro jalapenos (if you want) grilled bell pepper sliced avocado that beautiful mojo chicken breast and top it off with the mojo dressing. thanks for watching!
