recipe for chicken soup with vegetables, delicious chicken barley soup. it's the fall season and time to make lots of soups! if you don't already know... we love soup! please check out my


playlist of soups and stews (see link on screen and in description box) and there will be more recipes to come. let's get started! and by the way, you can find this recipe and the list of ingredients in the description box below. in a soup pan on medium heat i'm adding a little oil, some diced onions, celery, and carrots. seasoning with a little salt and black pepper, stirring and cooking


for three to four minutes. next, i'm adding some mushrooms. i didn't have any fresh so i'm using some canned. adding some diced tomatoes, stirring and cooking for another 2 to 3 minutes. now some seasonings. i have some minced garlic... parsley, thyme, and a little marjoram. i'm also adding a little savory. you can also use a little sage or poultry seasoning.


another good stir for one minute and next is the broth. i am using a total of ten cups of chicken broth. i roasted a chicken and made some bone broth. you can use a boxed or canned broth but just choose a low-sodium. i'm turning my heat up to high to bring up to a simmer. once at a simmer, i'm adding the barley. i have one cup of medium pearled barley.


there's also a quick barley. giving that a stri, bringing back up to a simmer and cooking partially covered for 45 to 50 minutes or until the barley is tender. if using a quick barley, you want to cook the soup for 30 minutes and then add the barley along with the chicken. if you like this chicken barley soup recipe please remember to give me a
