now the first thing i want to tell you todayis we are using chicken thighs they are actually cheaper than chicken breast and a little bitmore meatier so you can either use breast or thigh or wing, leg whatever you want todo. any bit of a chicken other than the beak andi know you vegetarians are going to love me saying that but thighs are really good theyare quite under rated. the actual hardest part with all this recipeis prepping your ingredients and i think that�s where i am bring out my inner kitchen gadgetself to get over this. for example the garlic clove was crushed upusing my rocker. my onion was sliced my easily my just slammingit down in the chopper thing and also the


sweet bell peppers that i used in the jalapenopoppers the other day, see that video inception. i also used it in that which made the preppingreally really easy so its all about bringing it together. its all going to come together in one bigold frying pan so get some oil in there then shove in your onions and peppers and withthe chicken thighs you can get some with bones in so remove the bones if you wish, and unravelthem ok so they kind of become like a carpet or a rug of chicken it will just cook a bitquicker. so all thats left to do is just basicallyleave the onions and peppers and the chicken cooking away and turning the chicken so itsstarting to cook and lightly brown evenly


sides. so make sure you do give it even distributionof cooking and your kitchen already will start smelling stonking. we are then going to drench those ingredients,i love that word drench, with a tin of chopped tomatoes. get that all in there mix it through get itworking away baby. your then going to try and expose the chickena little bit and then get some chipotle paste and just work that into each of the chickenpieces. dont worry the actual will work its way inthe sauce as well which is now going to gradually


simmer down. it might be first watery when you add thosechopped tomatoes in but dont worry that will all simmer off. and basically with boston keeping an eye onproceedings as he always does especially when theres some sort of meaty thing being cooked. you are just going to simmer that done fora good 10 to 15 minutes. with it all simmered down the last thing youare going to do is pour in the drained beans add them in there and just stir them gentlycos the heat in there if you mush them around, push them around, or mush them is the rightword actually cos they will actually mush


up and you just want to randomised them insidethat sauce. and we are basically ready to serve it up. when it comes to warming up the tortillasi normally just bung them in the microwave for about 30 seconds n fact that was whati did do. but one other cheeky way you can do is onceyouve got that sauce out of the pan maybe put it in a bowl, is actually heat the tortillasin that pan it will absorb all that flavour n there. very very nice indeed, anyhow lets build it. so start off with your warm tortilla a handfulof rocket salad, a good old scoop of your


saucy mix and then your chunks of chickenthighs. now that�s one mistake i made at the start,make sure you slice your chicken thighs into even pieces otherwise you have to slice itoff camera like i did. unless you just want one massive thigh inthere that would be good. add a little squeeze of lime juice some avocadochunks a little drench of sour cream just to take a little bit of that heat out, that�scompletely optional but gives it a nice freshness vibe going on and a sprinkle of fresh coriander. looking absolutely gorgeous, i ravelled itup shoved it in my mouth and i was in absolute chicken thigh heaven.
