jan: i do make carcass soup. walter: well, when i make carcass soup righthere, some of these folks that we have the pleasure of working with beg me to changethe name of it. jan: well, i guess you could get real creativewith what kind of carcass. walter: nope, nope. we didn't do that. okay. jan: alright. so you would bring this to aboil, right? walter: right, that will come up to a boil. jan: and then at home you would let it cometo a simmer first. walter: right.

jan: we're going to sprinkle in our parsley, and right here i have my big chicken. walter: big chicken. jan: this is my big chicken, and so that'sgoing to get stirred in here. jan: now i've used puff pastry because thatstuff is just fabulous. i think you could put just about anything in puff pastry andmake it taste really good. walter: and look really good. jan: it does; it looks so impressive, doesn'tit? walter: right and all you have to do is goto the freezer case at food city and buy it. jan: i know. you take 20 minutes. it sitson the counter top and boom. now if you want

to, you can put in a pie plate, but the puffpastry is already oblong. so it takes about three seconds to get it ready to go in thebottom of the casserole dish. jan: so we're going to take all of this, andwe're going to throw it in our casserole. walter: let's move along because we're goingto have folks moving in on us. jan: that's right. we have guests. walter: and so that's cooked. it goes in there. jan: goes in here, and we top it with thesecond one. walter: that you have wrapped around the rollingpin over here. jan: brush it with a little egg white andyou're done. throw that in the oven for 350
