hello friends and not-yet-friends, welcome to another what i ate wednesday, theweekly show where i share all my vegan eats in a day. but not actually since i alreadyate it so you can't have any but don't be jelly because you can make this stuff at homeeasy peasy. first thing in the am, i like having turmericmilk. only today was way too hot for a hot
recipe for chicken salad sandwich, drink. so over ice it was. and i think immado this all summer long. that was tasty. you've seen me make this breakfast chickpeacrepe thing before. today's ingredients was the exact same as in what i ate number 62. last time i had it with toast. today: frenchbread with some roasted red bell pepper aoili.
basically it's vegan mayo, garlic and roastedred peppers blended together and it's so good. at lunch i thought i'd give jackfruit onemore try. you might remember that i've tried green jackfruit a few times in pulled porktype recipes but i could always taste that faint bubble gum like jackfruit flavour andi just didn't like that. but a few of you asked for chicken salad ortuna salad type recipes and jackfruit's texture seems perfect for those, so this is for you. this time, i followed some of your tips thatyou left me in the comments and rinsed the jackfruit way more thoroughly. i removed the tough cores and the alien lookingseed pods.
ew, they're so creepy. then i tasted after every rinse. after about 5 rinses, the jackfruit flavourwas more faint but, of course, still there. i hoped that it was faint enough to be maskedwith seasonings. this is kind of my usual chickpea salad buti decreased the amount of chickpeas which will be replaced by jackfruit and added nutritionalyeast and poultry seasoning to give it a chicken-ish flavour. actually poulty seasoning is just a collectionof herbs so it doesn't taste like chicken, it's just that this combination of flavourstends to remind people of chicken. if you
know what i mean. if i was making this a tuna style salad, iwould be adding some powdered nori or dulse flakes or something like that instead. andprobably less nutritional yeast. doesn't that look a lot like regular chickensalad? but how does it taste? really good if i dosay so myself. i think it really tastes like chicken salad. but does it taste like jackfruit? i am sohappy to report that it did not taste like jackfruit at all. i fed it to my boyfriendwho also doesn't like the flavour of green jackfruit and he couldn't taste it either.victory is mine!
um yea. so had that in a sandwich and it wasreally tasty. i left the recipe link in the description so please let me know if you trythis and tell me what you think! and let me know what you would add to makeit even better. it was still friggen hot in the afternoonso i pulled some coconut ice cream that i've been experimenting with out of the freezer. this is literally just coconut cream, whippedup, flavoured with vanilla extract and sweetened with some icing sugar. i froze it in a bowland it came out really well. not icy at all, very creamy, very rich. perfect with fresh ripe cherries.
for dinner, i pulled out some bits and bobsfrom the fridge and thought i'd use this japanese curry packet that had been in my pantry formonths. first, i cooked the onions over medium heatuntil they were soft and turned a bit brown. just a little. then i dumped in my other veggies. and tvpballs that i had rehydrated previously. then two and a half cups of water. that wouldcome to a boil and then turned down to a simmer to cook the veggies through and turn the carrotssoft. after about 15, 20-ish minutes, i added thecurry paste. and added broccoli. about less than 10 minutes later, we get thisbeautiful, bubbling curry. the broccoli had
the perfect texture; soft in the florets whichhad soaked up lots of curry sauce and still slightly crunchy in the stem. i had this with some macaroni because whynot. this curry was really flavourful. mild tomy taste, but then i really like spicy food so this might be spicy to some of you. if you make this with tvp balls, be carefulbecause they retain heat and when you bite into them, the curry will explode out of themand maybe burn your mouth. safety first, kids! anyways, this was friggen delicious.
